SALEM HEALTH: Nutrition—with 255 entries—covers not only the nutritional value of dozens of foods and food groups, but includes nutritional therapy, how diet affects certain medical conditions, and societal issues such as fad diets and obesity.

Volume 1—Food Groups—covers Fruits, Vegetables, Grains, Protiens, and Dairy—with individual, detailed entries on specific foods, followed by entries on specific Beverages, Herbs & Spices, and Fats & Oils. Following the entries in Volume 1 is nutrition information from the USDA.
